If you are anything like me, breakfast during the week is the last priority on the ever expanding list of things to get done. That means that by the time the school run is over I am contemplating the shortest route to a cafe for any form of baked good. Unfortunately for me, my body thinks my thyroid is evil so I’m in a constant struggle with my weight and have to make a very conscious effort to eat healthy or not only do I continue to blow up like a blimp but I feel terrible. So far, the only thing that seems to work for me, is a breakfast smoothie. This is my go-to morning smoothie:
- 1 medium banana
- 1 small apple
- 1/2 cup fat free Greek Yoghurt
- 3/4 cup fat free milk
- 5 almonds
- 1 teaspoon cinnamon
To save some time and take advantage of fresh fruit, I prepare and freeze either of the 2 fruits (usually the banana as they have the shortest shelf-life). I have tried freezing both (which will cut down the prep time to a couple of minutes) but I found it was just too thick for my liking and difficult to drink. However if you feel like having a breakfast frozen yoghurt, it works really well. All in, this will take you 5 minutes to prepare and ensures that you have a healthy, fibre full breakfast that keeps you full for hours!
An added bonus is that both the boys love this so it is an easy breakfast option for them too!
